Here is our Administrative Assistant Rosie’s Ground Beef Stuffing Recipe.
10-15lbs Ground Beef (depends on the size of Turkey)
2 Stalks of Celery
1 Bunch Green Onion
3 Green Bell Peppers
1 Box Yellow Corn Meal
2 Cans 102 oz Whole Peeled Tomatoes
Brown the ground beef in a saute pan. Chop all vegetables while the ground beef is browning.
Once browned add salt, pepper, ground garlic & cumin to taste.
Next, add the vegetables to the ground beef and stir.
Now, prepare the corn meal according to instructions and make pancakes out of them.
Once your cornmeal pancakes are done, crumble them into the ground beef.
Next, open and blend the canned tomatoes and add them to the Ground Beef and stir all.
Let simmer for 5-10 mins and your stuffing is ready to go into your bird.
If you have leftover stuffing, wrap it up tightly in foil and cook it next to your Turkey.
